I don’t know about you guys, but as we get into the holiday season full swing, making sure that I and my family eats well gets a little more challenging. Keeping this in mind, even the Sunday night meal doesn’t take that long in this week’s menu. No low and slow roasts for a leisurely Sunday afternoon for now. That can come later when the bustle is over. This means that the leftovers won’t be so plentiful, but I’m assuming that’s okay for now as parties and entertaining are going to pull you away from your family tables a little more than usual.

Menu for December 3rd – 9th
Cumin and Thyme Lamb Chops
White Bean, Swiss Chard, and Feta Gratin
Pan-Seared Cauliflower with Spinach
Toasted Almond Rice
Asparagus, Tomato and Havarti Omelet
Serve with Salad
Creamy Non-Dairy Mushroom Soup

Work it Baby – Leftovers, Freezer Diving, and Eating Out
These days are to give you space to use up leftovers, clear out the freezer a bit, or have a night out. I’ve included some suggestions on how to use up leftovers. This is your time to experiment! Most of these suggestions should take less than 15 minutes to pull together.
Days 5 to 7:
Using up Leftovers
Add to chicken stock for soup
Toss with tomatoes and arugula for salad
With potatoes in a hash (add an egg on top)
As a pizza topping with ham
With the cauliflower, potatoes as hash
In a stir fry with bell peppers and onions
In potato salad with chives
Infused in olive oil
Use in hash with cauliflower and asparagus
Use in soup with gratin
In a simple syrup for cocktails
In boursin to spread on crackers or bagels
Make a creamy dressing
Infuse in vinegar
If, at the end of the week, there are still leftovers in your fridge, freeze and label everything and start fresh. These items will be useful for future Days 5 to 7 meals.
